TASTIEST CATCH CRAB LOUIS SALAD 1 1/2 lb jumbo lump crab meat Iceberg lettuce, shredded Capers Tomato wedges Hard-boiled egg Lemon Captain Sig Tastiest Catch Sauce Divide crab meat among 4 plates lined with shredded iceberg lettuce. Garnish with capers and wedges of tomato, hard-boiled egg, and lemon and serve with Captain Sig Tastiest Catch Sauce. ________________________________________ TASTIEST CATCH CRAB CAKES 1 lb. crab meat 1 egg, beaten 2 tbsp. Dijon mustard 2 tbsp. shallots 2 tbsp. chopped parsley 1 tbsp. lemon juice 1 tbsp. Captain Sig Tartar Sauce 1 tbsp. Captain Sig Sea Horseradish Sauce Approx. 20 crushed saltine crackers 1 stick butter Put
all ingredients in mixing bowl and mix thoroughly. Make sure there
is enough saltines to give it body. Using hands, take out desired
amount and shape into patties. Using a non-stick frying pan melt butter
and sauté crab cakes approximately 5 minutes on each side.
Do not burn. Serve with Captain Sig Tastiest Catch Sauce Soften
cream cheese. Blend all ingredients in mixing bowl. Place in small buttered
baking dish. Sprinkle 1/3 Cup sliced almonds on top. Bake at 375º
for 12 - 15 minutes. Do not over bake. Number of Servings: 8 Preheat
oven to 350. Line cookie sheet with foil. Spread salmon fillet, whole,
on foil. Mix mayonnaise, parmesan, onion and horseradish together in
a small bowl. Frost top side of salmon. Bake for 30-35 minutes until
fish flakes easily. If desired, you can place under broiler for a few
minutes to brown frosting. Number of Servings: 4-6 SALMON
